Tasting Notes
Brilliant pale gold in color, the wine shows a fine, chiselled effervescence reflecting its long ageing. The nose is generous and enveloping, opening with stone fruits, hawthorn, and a hint of sea spray, followed by vibrant citrus notes of yuzu and blood orange, lifted by fresh aniseed. With aeration, aromas evolve toward almond and ripe apricot. On the palate, the attack is precise and supple, revealing a well-rounded wine of beautiful ripeness. The texture is caressing and almost unctuous, with strong aromatic continuity from nose to palate. Freshness carries through in a subtle saline structure and lingering persistence, free of austerity. Yellow fruit and star anise notes culminate in a gourmand expression that inspired the artist’s interpretation of the wine.
