Tasting Notes
HVE 3 certified vineyards with inter-row grass coverage with legumes or cereal crops combined with controlled natural grassing or ploughing depending on the vintage conditions. Fruit was havested over the course of nearly 1 month from September 20th to October 17th, with gravity transfer of the grapes to the vats. 60% Cabernet Sauvignon, 36% Merlot, 4% Petit Verdot.
Vinified in temperature-controlled uncoated concrete vats. Gentle extraction (mostly sulfur free punching downs) and short vatting period of less than 4 weeks. Aged between 10 and 14 months, 80% in barrels: 1/3 in new barrels, 1/3 in one-year old barrels and 1/3 in two-year old barrels. 20% of total volume aged in uncoated concrete tanks.
