About the Winery
Sallier de la Tour is an 80 hectare estate in DOC Monreale at the Northwest Coast of Sicily. The estate, surrounded by 500 olive plants and 3 hillside lakes, is certified sustainable and on its eighth generation of family winemaking. The winery is very active in its efforts towards sustainability and their local environment – in everything from labor and economics to soil management.
“Our agriculture has always been based on principles of sustainability. We prefer that the cycles of nature be in control, without forcing it, supported by men and women proud of their own work and who grew up in these lands, and who have its future at heart, season after season. In our estates, we are all in agreement on the fact that virtuous actions create an advantage for the whole community and it is to underscore this commitment that we chose to adhere to the ‘SOStain’ program, the first protocol for sustainability in the winemaking sector.
Sostain allows us to know exactly the type of impact that our company has on the surrounding territory and how to limit that impact. It offers quantitative measuring tools that furnish the indications necessary to continuously improve, including among the things required, aspects that include soil management and erosion, from the way workers are recruited to the economic repercussions the business has on the territory, from checking the weight of bottles to renewable energies utilized.”
